Abstract: The present invention discloses a nutrient-dense, clean-label multigrain peanut spreader composition and a standardized method for its preparation, providing a healthy alternative to traditional commercial nut spreads without using hydrogenated oils, gums, synthetic emulsifiers, or artificial stabilizers and preservatives. The composition comprises essential natural ingredients including roasted peanuts, cooked foxtail millet, cooked quinoa, cooked rolled oats, flaxseed powder, and chia seed powder blended in specified proportions, with the option of natural sweeteners like jaggery or date paste. The manufacturing method comprises the essential steps of roasting raw peanuts at approximately 160°C; cooking the multigrains separately until fully gelatinized and soft to enhance digestibility; dry roasting and fine-milling flaxseeds; and combining all the ingredients in a high-speed blender. During blending, the natural mucilage from the chia and flaxseed powders functions as a natural emulsifier and thickener to form a smooth, uniform, and stable spreadable paste matrix. The resulting formulation delivers a well-balanced source of plant-based protein, dietary fiber, complex carbohydrates, and omega-3 fatty acids, exhibiting a moisture content of approximately 7.37% and an ambient shelf stability of 12 to 14 weeks in airtight, sterilized containers.
