Abstract: ABSTRACT The present invention discloses a nutraceutical dehydrated soup cube formulation and a process for its preparation. The formulation comprises Moringa oleifera leaf powder, Linum usitatissimum (flaxseed) seed powder, Trigonella foenum-graecum (fenugreek) seed powder, and Helianthus annuus (sunflower) seed powder as principal bioactive ingredients, in combination with dehydrated vegetable powders, binding agents, seasoning excipients, edible fat, and acidulants, compressed into a low-moisture cube. Three formulation variants (F1, F2, F3) are provided with varying concentrations of herbal components. The process involves dry roasting, fat sauteing, blending, dough formation, granulation through Sieve No. 22, primary dehydration at 60°C, cube compression, and final dehydration to constant weight. The formulated cubes demonstrate excellent granule flow (Carr's Index 10%, Hausner's Ratio 1.11), satisfactory reconstitution index (1.00), and water absorption capacity (1.10–1.19 g/g). Antioxidant evaluation by DPPH assay and total phenolic content by Folin-Ciocalteu method confirm nutraceutical potential. Sensory evaluation on a 5-point hedonic scale with 14 panelists confirms acceptability. The invention provides a convenient, shelf-stable, multi-functional nutraceutical food product for micronutrient supplementation and dietary health promotion.
