Abstract: Acrylamide is one of the important natural chemical being fabricate from the heating of food materials at high temperatures and has become product of interest for the scientific community of 21st century due to its toxicological activities. It is a vinyl polymer that has been used in industries since mid 1950’s as an intermediate step in the production of polyacrylamide but currently its primary application is for electrophoresis and chromatography in laboratory research. Occupational exposure of acrylamide has been reported in many studies. When enter the body acrylamide is readily absorbed and binds to haemoglobin and then it is distributed to different organs by body fluid. Acrylamide is largely oxidized to glycidamide in mice, rats and humans by its oxidizing agent CYP450 2E1. In humans, at relatively low doses of acrlamide, glycidamide is formed at higher extent than in rats because of the higher level of CYP450 2E1. Therefore, it is quite necessary to monitor and to find the possible ways for the reduct
