Abstract: [505] The present invention discloses a novel and comprehensive packaging methodology for the preservation of jamun (Syzygium cumini L.) jam, integrating carefully selected packaging materials with defined ambient storage protocols to systematically retard chemical, nutritional and sensory deterioration throughout an extended storage period, thereby ensuring consistent product quality, prolonged shelf stability and enhanced consumer acceptability of the processed fruit product. [510] The disclosed packaging framework employs a comparative multi-material evaluation methodology, utilizing seven distinct packaging formats including glass, polymeric, tetra-based, metallic and multilayer composite containers to identify the material configuration that most effectively minimizes moisture migration, oxidative degradation and nutrient loss while maintaining optimal physicochemical parameters of the jam during prolonged ambient storage. [515] The integrated approach combines standardized physicochemical analytical techniques with sensory evaluation protocols, monitoring total soluble solids, pH, titratable acidity, total and reducing sugars, ascorbic acid, anthocyanin content and total phenolic content at defined storage intervals to establish a reliable quality-retention profile for each packaging treatment across a 150-day ambient storage duration. [520] The novel packaging configuration features a multilayer pouch construction incorporating barrier properties against moisture, oxygen and light transmission, enabling superior retention of bioactive and sensory attributes of jamun jam in comparison to conventional glass, plastic and metallic packaging formats commonly employed in the fruit-processing industry. [525] The invention incorporates a systematic storage-stability assessment mechanism for identifying the packaging material best suited to preserving the nutritional and organoleptic integrity of jamun jam, thereby ensuring legitimate quality assurance for commercial and household applications across varied ambient storage environments. [530] The implementation methodology emphasizes practical, scalable and cost-effective packaging integration, utilizing readily available packaging formats and standard storage sequences to achieve superior retention of acidity, ascorbic acid, anthocyanin and phenolic constituents while minimizing quality loss during extended ambient storage of the fruit-based product. [535] The invention demonstrates its effectiveness through comprehensive comparative evaluation across all seven packaging treatments, validating the superior performance of the multilayer pouch and aluminium can formats relative to glass, PET, HDPE, PP and tetra pack alternatives under identical ambient storage conditions over 150 days. [540] The developed packaging framework enables sustainable and reliable preservation of jamun jam through a scientifically validated, commercially viable packaging system, offering significant advantages over conventional packaging approaches through superior retention of chemical, nutritional and sensory quality parameters throughout the storage period.
