Abstract: The present disclosure relates to a non-dairy synbiotic frozen dessert composition and a method for preparing the same. The composition comprises a coconut milk-derived lipid matrix, a natural sweetening system comprising mango pulp and stevia, and a pulverized barnyard millet (Echinochloa frumentacea) matrix encapsulating a viable probiotic culture of Lactococcus cremoris strain VMBR2. The pulverized millet matrix functions as a prebiotic substrate, a natural encapsulation matrix, and a cryoprotective carrier for the probiotic culture. The method comprises extracting and concentrating coconut milk, blending with barnyard millet powder, mango pulp, and stevia, pasteurizing to gelatinize the millet matrix, cooling, aseptically incorporating the encapsulated probiotic culture, homogenizing, and freezing to obtain the frozen dessert. The composition is substantially free from dairy ingredients and refined sugar and exhibits enhanced probiotic viability during frozen storage and simulated gastrointestinal transit.
