Abstract: ABSTRACT A MULTI-MILLET PONGAL COMPOSITION WITH BOTANICAL INGREDIENTS AND CONTROLLED PREPARATION PROCESS THEREOF The present disclosure provides a multi-millet cereal-pulse based pongal composition comprising a plurality of millet-derived ingredients including barnyard millet, foxtail millet, kodo millet, and little millet, a pulse-derived component comprising moong dal, a lipid component comprising ghee, spice components including black pepper powder, cumin seeds, curry leaves, asafoetida, rock salt, and cashew, and botanical functional ingredients comprising fenugreek and cinnamon. The composition is configured to undergo controlled hydration and thermal processing to form a homogeneous semi-solid pongal matrix characterized by absence of discrete grain structure and uniform consistency. The disclosure further provides a controlled preparation process comprising soaking of cereal and pulse components at a predefined hydration ratio and duration, followed by thermal processing to achieve starch gelatinization and grain disintegration, and incorporation of a lipid-spice-botanical mixture to enable uniform dispersion and integration of functional ingredients. The invention enables preparation of a pongal product with improved textural characteristics, enhanced sensory profile, consistent cooking performance, and moderated starch digestibility through coordinated interaction between composition and process parameters.
