Abstract: ABSTRACT Title of the Invention: A METHOD FOR PRODUCING VODKA USING FINGER MILLET AND A COMPOSITION THEREOF. A method (100) for producing vodka using finger millet and a composition source, along with sweet potatoes and raw maize corn for producing vodka. The method (100) enhances fermentation efficiency while maintaining the vodka's purity and structural integrity. The starch-based mixture is subjected to enzymatic hydrolysis (106), fermentation (110), and triple distillation (114) to reach an 10 alcohol concentration of 85-95%, followed by filtration (118) and dilution (120) to 3 7-40%. The process boosts yeast activity, shortens fermentation time, and eliminates the need for malting, making production more energy-efficient and environmentally friendly. The resulting vodka features a smooth texture, less bitterness, and a unique earthy and nutty flavor. This scalable and cost-effective 15 method (I 00) encourages agricultural diversification and sustainability by incorporating alternative grains. The method (100) yields a unique vodka composition with enhanced purity, flavor complexity, and a refined production process.
