Abstract: A METHOD FOR PRODUCING BETA-FRUCTOFURANOSIDASE The present invention provides a process for producing extracellular beta-fructofuranosidase by employing an agro-industrial substrate, which comprises supplementing the solid fermentation medium with a carbon source, adjusting the moisture content with water, sterilizing the medium, and inoculating it with spores of Chrysonilia sitophila, followed by incubation at a temperature of 25°C to 30°C for 4 to 10 days, and subsequently recovering the extracellular enzyme from the fermented medium.
