Abstract: ABSTRACT The present invention relates to an automated, label-free system and method for grading jaggery quality using unsupervised Fuzzy C-Means (FCM) clustering. The system utilizes only two field-accessible measurements, namely sugar yield and jaggery colour, thereby eliminating the need for laboratory-based biochemical analysis or labeled training data. The method ordinally encodes and normalizes the measurements, optimizes a domain-specific FCM fuzziness parameter using systematic evaluation of clustering quality and entropy, and performs clustering without access to grade labels. The resulting clusters are mapped to Premium, Standard, Economy, and Substandard grades based on yield-ordered ranking. Fuzzy membership vectors are generated to identify samples having ambiguous quality- grade boundaries. A procedural independence mechanism separates clustering from rule-based reference-grade generation, while a domain-guided multi-seed restart protocol improves convergence robustness. The invention provides objective, reproducible, field-deployable jaggery grading suitable for quality standardization, procurement, and fair pricing.
