Abstract: The present innovative novel emphases on the formulation and standardization of nutritional and functional food embracing with polyphenols rich seed, nuts and jeggery supplemented with probiotics derived from millet, potential for therapeutic interventions without any side effects. The probiotic healthy nutri laddu incorporated with seeds such as watermelon seed, fennel seed, poppy seed, pumpkin seed, chia seed, sunflower seed, black sesame seed, lotus seed, flax seeds, almond, walnut, pista along with millet derived probiotics such as Bacillus velenzensis strain CIMT3, Bacillus tequilensis strain AY2, Bacillus velenzensis strain IMAU802224 and Bacillus subtilis strain LRB 22. The palm jaggery was added additionally as natural sweetener and binding agent incorporated with cardamom as bio-preservative. The functional probiotic nutri laddu showed excellent result of proximate analysis including all food component. Furthermore, the sensory evaluation of the antioxidant-rich probiotic nutri-laddu by 30 volunteer panel members divided into five groups (6 members each), showed high acceptability for appearance, colour, aroma, taste, and texture with significant results (p 0.0001). This formulation shown potential antioxidant activity determined by using DPPH and FRAP assay. The Additionally, phytochemical analysis demonstrated the presence of secondary metabolites as total phenol and tannin indicating the strong antioxidant activity and defense mechanism of the product associated components. Surprisingly the probiotic viability was shown within 106 to 109 CFU/g even after 3rd week highlighting the efficient shelf life of the functional product. Overall this rich healthy nutrition food formulation improves immunity, nutrient utilization, provide defense system against pathogenic organism, suppress life style related disease and protect over all gut health.
