Abstract: A gluten-free, high-fiber, low-glycemic dried nugget (Badi) composition comprises a self-binding base of ground horse gram dal paste, a dewatered vegetable mixture of grated cucumber and ripe pumpkin in a fixed 2:1:1 ratio, a functional spice matrix, and Moringa oleifera leaves as a natural preservative. The processing method involves soaking horse gram dal for 7 to 8 hours, grinding it into a thick paste, blending it uniformly with the dewatered grated vegetables and spices, and molding the batter into 2 to 3 cm thick nuggets. The molded nuggets are subjected to controlled shade drying for 2 to 3 days to prevent hardening, followed by mid-process steam stabilization at 60°C for 5 to 10 minutes to eliminate microbial growth. The resulting product provides a shelf-stable, antioxidant-rich alternative to conventional nuggets without utilizing chemical preservatives or wheat binders.
