Abstract: The present invention provides an innovative, plant-based, and completely allergy-free paneer alternative derived from a unique matrix of underutilized air potatoes (Dioscorea bulbifera), red rice flour, corn flour, and natural coagulants. Formulated to resolve the dietary limitations of traditional dairy-based paneer and soy-based tofu, this composition eliminates common allergens like dairy-casein, soy, and gluten-forming wheat proteins while providing a clean-label product free of synthetic preservatives and artificial stabilizers. The manufacturing process involves a thermomechanical workflow where steamed air potato paste is structurally stabilized with red rice and corn flours, and subsequently coalesced via a controlled natural coagulation process to achieve an authentic texture that is simultaneously firm and soft. The resulting product exhibits a superior nutritional profile high in dietary fiber, protein, and essential micronutrients, while supporting environmental sustainability, local agricultural economies, and regional food security initiatives.
