Abstract: ABSTRACT A FRESH SWEET POTATO AND PERILLA SEED ENRICHED BAKED CRACKER COMPOSITION AND A PROCESS FOR PREPARATION THEREOF The present invention relates to a baked sweet potato cracker enriched with perilla seeds and a process for preparation thereof. The composition comprises fresh sweet potato, wheat flour, roasted perilla seeds, cheese, salt and baking powder. Fresh sweet potato is pressure cooked, peeled and mashed before being combined with wheat flour and other ingredients to form a dough. Roasted perilla seeds are incorporated into the dough at a controlled level. The dough is rolled, shaped into cracker pieces and baked at 180°C for 25 minutes, followed by cooling at 27 ± 2°C. In representative formulations, 40 g fresh sweet potato is combined with 40–52 g wheat flour and 8–20 g perilla seeds. The invention provides a reproducible baked snack utilizing fresh sweet potato instead of sweet potato flour while incorporating perilla seeds for improved flavour and nutritional value.
