Abstract: 29 ABSTRACTABSTRACTABSTRACTABSTRACT A phytase-treated food composition and a method thereof The invention relates to a phytase-treated cereal- legume composite food composition and a method thereof. The composition comprises a phytase-treated cereal-legume protein matrix and spirulina powder as an essential ingredient, with optional additives in q.s. amounts. The cereal-legume matrix may include ragi or finger millet, brown rice, pea, and moong dal flours in defined proportions. Phytase treatment is conducted under controlled conditions to reduce phytate content, improve mineral bioavailability, and increase in vitro digestibility. The composition exhibits reduced phytic acid content and improved digestibility relative to a non-phytase-treated comparative composition. The method includes hydrating the cereal-legume mixture, incubating with phytase, and blending with spirulina before drying or thermal setting. The composition is useful as a composite flour, ready-to-cook mix, or instant food premix.
