Abstract: TITLE: A FERMENTATION-TRANSFORMED AGRO-WASTE POSTBIOTIC NANO-COATING PROCESS FOR AMBIENT PRESERVATION OF TROPICAL FRUITS APPLICANT: MEENAKSHI ACADEMY OF HIGHER EDUCATION AND RESEARCH ABSTRACT The present invention discloses a sustainable process for preserving tropical fruits at room temperature using a fermentation-transformed agro-waste postbiotic nano-coating. Agro-industrial residues including banana peel, pomegranate rind, and citrus peel are fermented in an aqueous medium containing glucose and yeast extract with Lactobacillus plantarum and Bacillus subtilis, producing postbiotic-rich bioactive fractions with enhanced antifungal activity. The filtrate obtained after centrifugation and filtration is incorporated into a biodegradable chitosan-based edible nano-coating prepared in acetic acid. Essential oils such as clove oil and cinnamon oil are dispersed as nanoemulsions stabilized with Tween 80 to provide synergistic and controlled antifungal release. The coating is applied to tropical fruits by dipping and air-drying, forming a protective edible layer. The system offers multi-mechanism antifungal action, reduces fungal spoilage, extends shelf life under ambient tropical conditions, eliminates synthetic chemical residues, and valorizes agro-waste, thereby advancing eco-friendly post-harvest preservation technologies.
