Abstract: The invention relates to functional baked food products, particularly a preservative-free cracker composition and its preparation process using refined wheat flour, barnyard millet flour, ragi flour, quinoa flour, apple pomace, and watermelon rind paste obtained from the white rind portion after removal of the outer green peel. Compared with conventional crackers based mainly on refined flour, the disclosed composition improves fibre, mineral and antioxidant attributes while valorising fruit and vegetable processing by-products. The process includes creaming butter and sugar, mixing the flour and seasoning system, incorporating apple pomace and watermelon rind paste, adding water to form a homogeneous dough, refrigerating at 4 °C for 30 minutes, rolling, cutting, perforating, and baking at 180 °C for 15 minutes to obtain a baked cracker useful as a nutrient-enriched ready-to-eat snack. Fig. 1 best characterises the invention.
