Abstract: The present invention discloses a sugar-free pro- and pre-biotic ice-cream composition and a method for preparation thereof. The composition comprises fermented fruit extract selected from banana, orange, guava, kiwi, dates or combinations thereof, probiotic yogurt containing Lactobacillus delbrueckii ssp. bulgaricus and Streptococcus thermophilus, banana pseudostem powder as a prebiotic fiber source, and dates powder as a natural sweetener, without addition of refined sugar. The method includes fruit washing, paste preparation, controlled fermentation, preparation of probiotic yogurt through thermal treatment and inoculation, blending with banana pseudostem powder and dates powder, followed by freezing to obtain a nutraceutical ice-cream product. The developed formulation provides enhanced dietary fiber, probiotic viability, antioxidant properties, and improved sensory acceptability, making it suitable as a functional food alternative for individuals requiring low- sugar dietary options, including persons with obesity, insulin resistance, diabetes, or PCOS-related conditions.
