Abstract: ABSTRACT A BIGEL-BASED FAT REPLACER AND A PROCESS FOR THE PREPARATION THEREOF A bigel composition for use as a fat replacer is disclosed. The composition comprises a hydrogel phase of sodium alginate (0.5 to 1.2% w/w) and konjac gum (0.2 to 0.8% w/w) ionically crosslinked by calcium ions, and an oleogel phase of rice bran oil structured by glyceryl monostearate (5 to 10% w/w) and lecithin (1 to 3% w/w). The phases are combined in a weight ratio of 40:60 to 70:30, preferably 60:40, by two-stage high-shear homogenisation, whereby oleogel droplets are dispersed within a continuous hydrogel matrix. The composition exhibits shear-thinning flow, complete phase retention at 7 days and retention above 86% at 21 days, oxidative and colour stability, and a semi-crystalline structure. Employed as a complete butter replacer in pound cake, it reduces hardness, improves springiness and sensory acceptability, and lowers saturated fat content.
