According to the abstract released by the Intellectual Property India: "The present invention discloses a single unit-based system for proofing and baking of bread dough, comprising an oven containing a vacuum chamber which is configured to maintain controllable vacuum condition, and a dough holding assembly disposed within the vacuum chamber with an ohmic heating means for controllable heating of the bread dough placed on the dough holding assembly both during proofing and baking stage. The vacuum chamber is maintained at a partial vacuum while the ohmic heating means is operated to maintain a uniform dough temperature of approximately 35 to 37 C for 30 to 45 min during proofing, subsequently the same vacuum chamber is maintained at atmospheric pressure and the same ohmic heating means is operated to continuing ohmic heating until the dough reaches a temperature approximately 95 to 99 C, thereby completing the baking process in 18 to 21 min."
