MUMBAI, India, March 13 -- Intellectual Property India has published a patent application (202511009558 A) filed by Indian Council Of Agricultural Research, New Delhi, on Feb. 5, 2025, for 'spice-flavored fruit chews and a method for preparing the same using vacuum impregnation technique.'

According to the abstract released by the Intellectual Property India: "The disclosure relates to a process for preparing spice-flavoured fruit chews using vacuum impregnation. Selected fruit materials such as nutmeg rind, papaya, and ash gourd are washed, cut into cubes, and blanched, followed by immersion in a sugar syrup impregnating solution containing natural food colour, citric acid, and spice oleoresins. The fruit cubes are subjected to controlled vacuum pressure, temperature, and time conditions to enable uniform infusion of flavouring and preservative components into the fruit matrix. After impregnation, the cubes are dried under regulated conditions and packaged in food-grade, multi-layered pouches to obtain shelf-stable fruit chews with improved sensory quality and nutritional retention. The process enhances the incorporation of bioactive compounds, reduces processing time compared to conventional osmotic dehydration, and enables the utilization of underutilized fruits for producing value-added snack products with extended shelf life and improved consumer acceptability."
