MUMBAI, India, May 29 -- Intellectual Property India has published a patent application (202631062052 A) filed by Assam Down Town University, Guwahati, Assam, on May 15, for 'soy-free plant-based tofu analogue derived from cicer arietinum and a process for preparation thereof.'

The application for the patent was published on May 29, under issue no. 22/2026.
According to the abstract released by the Intellectual Property India: "The present invention relates to a chickpea-based tofu product as a non-soy plant-based protein alternative. The invention provides a tofu analogue prepared from chickpea extract through protein coagulation to form a firm and cohesive matrix. The product may be optionally fortified with vegetable-derived components such as beetroot and spinach to enhance nutritional value, antioxidant content, and functional properties. The chickpea tofu exhibits improved protein quality, acceptable sensory attributes, and suitability for individuals with soy allergy or intolerance. The invention finds application in the functional food, dietetic, and nutraceutical sectors and utilizes low-cost, widely available raw materials suitable for large-scale production."
