According to the abstract released by the Intellectual Property India: "The present invention relates to a sugar-free, ready-to-drink (RTD) apple ice tea and a method of preparation thereof. The beverage comprises fresh apple juice blended with Kangra orthodox tea infusion, adjusted to a Total Soluble Solids (TSS) of 10-13 B using natural sweeteners such as stevia and xylitol. The method comprises steps of extracting apple juice by washing, peeling, chopping, grinding, and filtering apples; preparing a tea infusion by steeping 0.9-1.0% w/v Kangra tea leaves in hot water at 90-100 C for 30-45 minutes followed by filtration; blending 40-60% w/v apple juice with 50-70% w/v tea infusion; adjusting the TSS using natural sweeteners; heating the mixture to 85 2 C; hot-filling into sterile containers; and pasteurising at 96 C for 20 minutes, followed by cooling and storage at ambient temperature. The resultant beverage is stable without refrigeration, free from refined sugar and synthetic additives, and demonstrates synergistic enhancement of antioxidant potential, vitamin and mineral retention, and sensory acceptability, thereby providing a functional health-promoting drink."
