The microcapsules demonstrated good encapsulation efficiency (88.18%), high solubility (90.61%), and low moisture (5.05%). The beverage had 15 bioactive chemicals with anti-cancer and antioxidant qualities, and its physicochemical characteristics are ideal (pH 3.03, titratable acidity 0.34%, total soluble solids 10.26 Brix). It showed antiproliferative activities against HT-29 cells (IC50 = 2.25 mg/ml) and a notable phenolic content (90.36 mg GAE/100 ml). Underutilized pomelo fruit can be sustainably used with PhytoBurst Pomelo."
