According to the abstract released by the Intellectual Property India: "The present invention provides a high-protein, plant-based wheat formulation and methods for producing the same. The process begins with blending the primary protein sources, including wheat gluten, pea protein, oat flour, and gram flour, along with optional seeds, nuts, fibers, hydrocolloids, oils, and nutritional fortifying agents (100). The dry mixture is then hydrated with water or aqueous solutions at a ratio of 1:0.8 to 1:3 (solid:liquid) to form a cohesive protein matrix (101). The hydrated matrix is subsequently subjected to thermal and/or mechanical processing, including baking, steaming, kneading, extrusion, molding, or pressure cooking, at temperatures between 70-150 C for 5-60 minutes to achieve desired firmness and organoleptic properties (102). Finally, the processed matrix is shaped into blocks, cubes, patties, nuggets, or other culinary forms suitable for cooking and storage (103). The final product delivers approximately 62% protein by weight, wherein the final product provides a protein content of 60-65% by weight, 0% cholesterol and sugar, superior texture, and improved digestibility, providing a versatile and nutritionally superior plant-based protein source."
