MUMBAI, India, April 20 -- Intellectual Property India has published a patent application (202411076043 A) filed by Shoolini University Of Biotechnology And Management Sciences, Solan, Himachal Pradesh, on Oct. 8, 2024, for 'nutrient-enriched cookies prepared using vegetable by-products.'

According to the abstract released by the Intellectual Property India: "The present invention relates to the formulation of nutrient-enriched cookies using carrot and beetroot pomace powders as partial substitutes for wheat flour. The present invention explores the potential benefits of incorporating these vegetable by-products, focusing on their impact on the cookies' physico-chemical and sensory properties. Carrot and beetroot pomace powders were prepared through convective dehydration and vacuum drying processes. The addition of these powders increased the cookies' fiber content while reducing carbohydrates, protein, and calorific value. Despite changes in texture and spread ratio, the overall sensory acceptability remained high, particularly for the formulation labeled T2. Present invention also emphasized the importance of packaging, showing that cookies stored in metalized pouches maintained better color, texture, and shelf life compared to those stored in LDPE pouches. This invention offers a sustainable approach to creating high-fiber, nutrient-dense bakery products, while repurposing fruit and vegetable by-products, contributing to the reduction of food waste."
