MUMBAI, India, Sept. 12 -- Intellectual Property India has published a patent application (202441015754 A) filed by Arunasree TNA; Kaviya M; Mathisri R; Manojini S; Snekha N; Abirami AV; and Sudarshini J, Sathyamangalam, Tamil Nadu, on March 5, 2024, for 'microgreen infused mixed millet cookies.'

The application for the patent was published on Sept. 12, under issue no. 37/2025.
According to the abstract released by the Intellectual Property India: "Microgreens are emerging specialty food products which are gaining popularity and increased attention nowadays. They are young and lender cotyledonary leafy greens that are found in a pleasing palette of colors, textures, and flavors. A process for preparation of a microgreen and millet based cookies was optimized using fenugreek (Trigonella foenum graecum) microgreen, pearl millet (Pennisetum glaucum), finger millet (Eleusine coracana),wheat and sugar. The different ratios of cookie blends were analyzed for moisture content, water activity, protein, fat, fiber and sensory analyses. It had high minerals (calcium and phosphorous) vitamin B, dietary fiber and protein content as well as good source, phenols and antioxidants. The shelf life of the product can be increased by using preservatives. These antioxidants help in reducing CVD by lowering the LDL cholesterol level."
