MUMBAI, India, Dec. 13 -- Intellectual Property India has published a patent application (202511102362 A) filed by Lovely Professional University, Phagwara, Punjab, on Oct. 24, for 'method for preparing nutrient-rich ready-to-cook vegetable peel powder.'

Inventor(s) include Ms. Srija Bhowmik; and Dr. Abhijit Das.

The application for the patent was published on Dec. 12, under issue no. 50/2025.

According to the abstract released by the Intellectual Property India: "The invention relates to a method (100) for producing ready-to-cook nutrient-rich powder from vegetable peels, including potato, pointed gourd, and raw banana. The process includes collection and washing of peels (step 102), blanching/boiling for microbial safety and anti-nutritional factor reduction (step 104), grinding into a smooth paste (step 106), spice incorporation with garlic, chili, turmeric, black cumin, and salt (step 108), optional addition of natural carriers (step 110), drying using sun, hot-air, dehydrator, freeze, or spray methods (step 112), grinding and sieving into uniform powder (step 114), and packaging in airtight or nitrogen-flushed pouches with desiccants (step 116). The powder retains fiber, vitamins, minerals, and phytochemicals, is shelf-stable for 6-12 months, and can be instantly rehydrated to prepare soups, curry bases, or porridge, providing a convenient, sustainable, and nutrient-dense food solution."
