MUMBAI, India, May 29 -- Intellectual Property India has published a patent application (202631062371 A) filed by Assam Down Town University, Guwahati, Assam, on May 16, for 'method for manufacturing bioactive pigmented rice-based candy with enhanced antioxidant retention.'

According to the abstract released by the Intellectual Property India: "The invention relates to a novel black rice-based candy and a standardized method for its preparation are disclosed. The invention utilizes pigmented black rice (Oryza sativa L.) rich in anthocyanins and bioactive compounds to produce a shelf-stable confectionery product with improved texture, reduced stickiness, and acceptable sensory properties. Black rice flour is combined with sweetening agents and binding components in predetermined ratios and processed under controlled cooking and moisture regulation conditions to obtain a uniform and smooth candy. The invention provides a reproducible, scalable process suitable for commercial production while enabling value addition to indigenous black rice and meeting consumer demand for nutritionally enriched confectionery products."
