MUMBAI, India, Oct. 24 -- Intellectual Property India has published a patent application (202441032094 A) filed by M. S. Ramaiah University Of Applied Sciences, Bangalore, Karnataka, on April 23, 2024, for 'ice cream dessert to combat bacterial infections and boost immune system.'

According to the abstract released by the Intellectual Property India: "The present invention discloses a ginger-flavored ice cream comprising an infused ice cream base and unique crystallized inclusions called "Grystals." The base is prepared by heating milk with dried ginger powder, filtering, and stabilizing with corn starch. Honey and whipped cream are then incorporated. Grystals, which offer a crunchy, butterscotch-like texture, are formed by boiling ginger powder with sugarcane juice and jaggery, caramelizing the mixture, adding butter, and breaking it into small pieces. The product boasts a sweet-spicy flavor profile with a total fat content of less than 7%. The method ensures flavor infusion and texture uniformity."
