MUMBAI, India, May 29 -- Intellectual Property India has published a patent application (202611051116 A) filed by Dr. Suhani Agarwal; and Dr. Parimita, Moradabad, Uttar Pradesh, on April 22, for 'honey-based fortification strategy for enhancing iron and calcium content in traditional petha sweet.'

According to the abstract released by the Intellectual Property India: "The present invention discloses a honey-fortified Petha sweet composition prepared from ash gourd (Benincasa hispida) with partial substitution of refined sugar by natural honey from Apis mellifera. The composition contains ash gourd, sugar, and honey in a ratio of 40:50:10 to 40:10:50, with an optimal ratio of 40:30:30. The process includes peeling, deseeding, and dicing ash gourd, soaking in 1-2% calcium hydroxide for 2-3 hours, blanching at 70 2C for 5-10 minutes, and cooking in 65-70 Brix syrup at 40 5 C for 50-55 minutes, followed by honey incorporation without boiling. The product shows enhanced calcium (13.07-14.95 mg/100 g) and iron content (4.81-4.93 mg/100 g), significantly higher than conventional formulations."
