MUMBAI, India, Feb. 13 -- Intellectual Property India has published a patent application (202611001585 A) filed by Ms. Anjali; Dr. Anisha Verma; Dr. Sadhna Singh; and Dr. Pragya Pandey, Ayodhya, Uttar Pradesh, on Jan. 7, for 'fortified finger millet pasta formulation with enhanced nutritional and functional properties.'

According to the abstract released by the Intellectual Property India: "The present invention relates to a fortified pasta composition comprising finger millet flour blended with semolina and a method for preparing the same. The invention aims to provide a nutritionally enhanced pasta product with improved functional, physicochemical, and sensory properties. Finger millet flour is incorporated in the range of 60-75% by weight, while semolina is added in the range of 25-40% by weight to enhance dough structure and cooking stability. The preparation process includes blending, hydration, kneading, resting, extrusion, controlled drying, and packaging. The resulting pasta exhibits an optimal cooking time of 4-5 minutes, reduced cooking loss, moisture content not exceeding 13%, and firm texture. The fortified pasta provides increased dietary fiber, calcium, iron, and essential micronutrients while maintaining high consumer acceptability. The invention offers a functional, health-oriented pasta product suitable for large-scale commercial production."
