According to the abstract released by the Intellectual Property India: "The present invention discloses a method for developing and standardizing a nutrient-enriched, ready-to-eat rice paper incorporating Azolla pinnata and mint extract. The formulation comprises rice flour (35%), corn flour (35%), Azolla pinnata powder (20%), and mint extract (10%). Azolla is processed by blanching, drying, grinding, and sieving to preserve nutrients. The batter is steam-cooked into thin sheets and dried. The optimized product (Variation III) exhibits superior sensory scores, with high protein (9.1 g), fiber (2.4 g), iron (260 mg), and vitamin C (48 mg) per 100 g. The rice paper is gluten- free, translucent, and chewy upon hydration. Packaged in polypropylene or coated paper, it offers a functional, convenient alternative to traditional rice paper, suitable for fresh rolls and snacks. The production cost is economically viable (Rs. 28.38/100g), supporting scalability. This invention enhances the nutritional profile of staple rice-based products using sustainable, underutilized plant resources, promoting health and food innovation."
