MUMBAI, India, Jan. 9 -- Intellectual Property India has published a patent application (202541133642 A) filed by Sr University, Warangal, Telangana, on Dec. 30, 2025, for 'composition of an air-fried moringa rice crisp snacks and method thereof.'

The process involves dry-roasting rice flour, forming dough with optimal hydration, and air-frying under controlled conditions to achieve crispness while preserving heat-sensitive nutrients such as vitamin C and polyphenols. Moringa contributes antioxidants and essential vitamins, while curry leaves provide anti-inflammatory compounds, enhancing the functional benefits of the snack. The use of air-frying technology reduces oil consumption, minimizes acrylamide formation, and supports environmental sustainability. Nutritional analysis confirmed high protein, fiber, and antioxidant activity, while sensory evaluation demonstrated strong consumer acceptability. The invention offers a healthier, eco-friendly alternative to conventional fried snacks, addressing hidden hunger and promoting sustainable food innovation."
