MUMBAI, India, Jan. 9 -- Intellectual Property India has published a patent application (202521128153 A) filed by Mit Art, Design And Technology University, Pune, Maharashtra, on Dec. 17, 2025, for 'beetroot based food product and method thereof.'

Inventor(s) include Ghodke, Sujata V; and Ganorkar, Anatara.

The application for the patent was published on Jan. 9, under issue no. 02/2026.

According to the abstract released by the Intellectual Property India: "The present invention aims to enhance nutritional content, boost antioxidant activity, and significantly reduce acrylamide formation, a hazardous compound generated during high-temperature baking. The composition involves the partial substitution of wheat flour with a blend of 20-30% beetroot powder and 1-3% ginger powder. This novel composition leverages the inherent antioxidant, anti-inflammatory, antibacterial, and potential anticancer properties of beetroot and ginger to deliver a functional food product. Experimental results demonstrate a notable increase in antioxidant activity and total phenol content, along with a 15.2% reduction in acrylamide content, making these edible food product a safer and more nutritious alternative."
