Abstract: ABSTRACT AN EFFICIENT PROCESS FOR EXTRACTION AND PURIFICATION OF BROMELAIN FROM AGROINDUSTRIAL WASTE Bromelain is a potential proteolytic enzyme present in various parts of agro-industrial waste, such as pineapple, and has industrial importance with a wide range of applications. The present invention provides a simple, efficient, and industrially scalable process for the extraction and purification of bromelain from pineapple waste. The bromelain activity of at least 0.5 CDU/mL and protein concentration of 0.013 mg/mL was achieved using commercially available, inexpensive extraction media. The combination of membrane separation and adsorptive chromatographic purification provides industrially viable purification of crude bromelain. Thus, the present process provides an efficient strategy for the valorization of pineapple peel waste through the extraction and purification of bromelain as a potential product.
