MUMBAI, India, Jan. 8 -- Intellectual Property India has published a patent application (202511105198 A) filed by Upes, Dehradun, Uttarakhand, on Oct. 31, 2025, for 'allergen free nutritional sustainable food formulation using ultrasound-assisted extraction of perilla seed protein isolate.'
Inventor(s) include Tanu Singh; Prof. Amit Kumar; and Dr. Mitali Madhumita.
The application for the patent was published on Dec. 12, under issue no. 50/2025.
According to the abstract released by the Intellectual Property India: "A method (100) for producing an allergen free nutritional sustainable food formulation using ultrasound-assisted extraction of perilla seed protein isolate (PPI). The method comprises cleaning, dehulling, and fine milling of 30g perilla seeds to obtain flour, extracting protein via ultrasound-assisted alkaline solubilization and isoelectric precipitation to obtain PPI, analyzing PPI for physicochemical, functional, structural, and nutritional properties, blending PPI with natural binders, incorporating carbohydrate sources, adding healthy fats and natural flavoring agents, and mixing and casting into desired form. The resulting formulation is naturally free from major allergens, exhibits optimum solubility, emulsification, foaming, gelation, and water/oil holding capacities, and shows improved texture retention without bitterness. Comprehensive evaluations demonstrate microbial."
