MUMBAI, India, Jan. 2 -- Intellectual Property India has published a patent application (202541122867 A) filed by Meenakshi Academy Of Higher Education And Research; Meenakshi Ammal Dental College and Hospital, Chennai, Tamil Nadu, on Dec. 5, 2025, for 'a process of preparation of low glycemic index jam composition and product thereof.'

According to the abstract released by the Intellectual Property India: "The present invention discloses a process of preparation of low glycemic index jam composition comprises of following steps; a. collecting fresh lychee fruit and washing with distilled water followed by removing the pulp and heating the pulp under stirring to form a softened lychee pulp base; b. soaking chia seeds in warm distilled water and grinding to form a hydrated chia gel; c. mixing the softened pulp base, the hydrated chia gel and jaggery under stirring to form a uniform mixture followed by adjusting the pH using freshly squeezed lemon juice; d. heating the mixture under continuous stirring to form a jam with appropriate Brix; e. filling the prepared jam hot into pre-sterilized glass jars followed by sealing the jars while hot and storing under appropriate temperature. The present invention also discloses a low glycemic index jam composition, prepared by the process as described above."
