MUMBAI, India, Jan. 23 -- Intellectual Property India has published a patent application (202641001497 A) filed by Meenakshi Academy Of Higher Education and Research; and Meenakshi Medical College Hospital And Research Institute, Chennai, Tamil Nadu, on Jan. 6, for 'a process of preparation of anti-obesity snack chips with enhanced resistant starch content.'

According to the abstract released by the Intellectual Property India: "The present invention discloses a process of preparation of anti-obesity snack chips with enhanced resistant starch content comprises of following steps; a. mixing green banana flour, psyllium husk, rice flour, vegetable oil, moringa leaf powder and seasoning blend comprising salt, chili powder, onion powder or garlic powder, turmeric powder, cumin powder, black pepper powder and citric acid in water to form a homogeneous dough; b. extruding the dough through a twin-screw extruder at a barrel temperature, a screw speed and a residence time to form partially gelatinize starch followed by rapidly cooling the extrudate to promote starch retrogradation and form resistant starch; c. slicing the resistant starch into thin chips with an appropriate thickness and processing the sliced chips by baking or air-frying with a moisture content to form an anti-obesity snack chips with enhanced resistant starch content; d. packaging the snack chips in a moisture barrier laminate pouch with water vapor transmission rate. The present invention also discloses an anti-obesity snack chips with enhanced resistant starch content, prepared by the process as described above."
