MUMBAI, India, May 30 -- Intellectual Property India has published a patent application (202311081141 A) filed by Council Of Scientific And Industrial Research, New Delhi, on Nov. 29, 2023, for 'a method for production of enzyme mix for peparation of no-added sugar bread.'

Inventor(s) include Sarma Venkata Ravi Krishna Mutturi; Prabhasankar Pichan; Gnanesh Kumar Belur Shivappa; Ashwath Kumar Kathalsar; Punil Kumar Hulikere Koppalu Ningegowda; Ashok Sadhu; Abel Anbarasan Philip; and Teja Sree Hamasavathu.

The application for the patent was published on May 30, under issue no. 22/2025.

According to the abstract released by the Intellectual Property India: "The present invention provides a method for production of enzyme mix using a non-niger fungal isolate Aspergillus neoniger NCIM1400. The enzyme mix contains a-glucosidase transglycosylating, amylolytic enzymes (a-amylase and glucoamylase), -glucosidase, sulfhydryl oxidase, endo-arabinase, a-1,2 mannosidase, -mannosidase, and xylanase as the major fractions. The medium composition, upstream and downstream cultivation methodology were optimized for this new isolate. Moreover, the present invention provides the information on the application of this enzyme mix as a dosage constituent to the dough to obtain superior quality bread which can be considered as no-added sugar bread."
