According to the abstract released by the Intellectual Property India: "The present invention relates to improving the protein content of dal-based foods through a plant-based composition comprising soy protein and soy flour. The composition is processed 15 by extrusion to form discrete dal analogue kernels, having morphology corresponding to natural dal. The product exhibits hydration, cooking, and disintegration behaviour upon mashing comparable to natural dal and is capable of co-cooking with natural dal. The composition may further comprise at least one of a starchy component including rice flour or fortification with vitamins and minerals, thereby providing a protein-enhanced dal analogue 20 with functional and culinary characteristics comparable to conventional lentils."
