Abstract: ABSTRACT An automated system and computer-implemented method are disclosed for tracking, typologically classifying, and predictively mitigating organic food waste within commercial hospitality ecosystems. The system comprises a network of distributed Smart Waste Capture Units equipped with co-registered proximity sensors, digital load cells, and overhead image acquisition devices that automatically log waste events at the point of disposal without manual entry. An AI Classification Engine uses deep convolutional neural networks to identify specific food items and categorize waste into operational streams, including preparation trim, buffet overage, plate waste, and inventory spoilage. An Integration Layer syncs this data with hotel property management (PMS) and point-of-sale (POS) systems to extract occupancy volumes and sales velocities. A Predictive Forecasting Module processes these variables via time-series machine learning models to predict future demand, driving a recommendation engine that updates kitchen prep sheets and inventory strategies in real-time to maximize efficiency and sustainability.
